Ingredients

    1 package (6 ounces) herb stuffing mix
    2 celery stalks, chopped (1 cup)
    1 medium apple, chopped (1 cup)
    1 large onion, chopped (1 cup)
    1/2 cup dried cherries
    1 cup fat-free chicken broth
    3 boneless pork chops, about 1/2 inch thick, cut in half

Directions

1. Spray inside of 4- to 5-quart slow cooker with cooking spray.
2. Mix all ingredients except pork. Place half of the stuffing mixture in slow cooker; top with pork. Spoon remaining stuffing mixture over pork.
3. Cover and cook on low heat setting 6 to 8 hours or until pork is tender. Add more water if necessary.

Serving size: 1/2 cup stuffing, plus 1/2 pork chop (about 3 ounces cooked)

    One of THE best crock pot recipes I've tried yet! Sweet meets savory and for not too many calories. Thanks so much! As a side note, I used a ~2lb roast instead of chops. Also, I left the skins on the apples - it was faster. - 10/21/08

    Thank you; I'm glad you liked it. I'll have to try it with the roast. I'm making it again next week except I'm thinking about doing cranberries and peaches instead of the apples and cherries.

    LOVED IT! Used pork loin, left out the cranberries, added mushrooms and sweet potato, reduced broth to 3/4 cup. Lots of ways to use this as a base recipe - will try with turkey breast or chicken next time. - 1/20/13

    Used 2 pork chops & 3 chicken breasts. My husband ate it up & begged to eat the portions saved as leftovers for a busy night mid-week. He had no idea this was a "healthy" recipe... even got a serving of fruit & vegetables in him without complaint! - 9/27/11

    The recipe is good but the portions and nutrition information are off. Only 3 oz of pork for the whole recipe is not accurate. It should be 3 oz per pork chop added. For a total of 18 oz of pork. The recipe is good but don't rely on putting it in your food tracker. - 12/19/11

    Very tasty and super easy to make, but the calories are way off. I got around 370 per serving by my calculation. I used the dried cranberries as the title suggests. Also may try with a roast next time as my pork chops fell apart due to the slow cooking. - 2/24/09

    Made this for my family and they loved it! It was so quick and easy to make too. I did use some extra pork and I added some stuffing because with serving 6 boys/adults I was afraid it wouldn't be enough. It all turned out great! We will definitely be making this again. - 9/23/10

    dont know what happened.. smelled great cooking but the dressing came out way to moist, one reviewer described is as a soupy mess, (my thoughts as well) I ate a couple chops and threw the rest out, family wanted nothing to do with it.. - 2/15/12

    My eight year old and I both liked this. She is not a real stuffing fan, but she ate this. The pork chops were tender, and my stuffing was neither too dry or too mushy. Super easy to make, I will definitely be making it again! - 9/29/10

    I'm confused - the recipe name says cranberry but the recipe calls for dried cherries? I wondered if that was a typo and should be dried cranberries? I know they taste pretty similar so I'm guessing they are interchangeable? I made this and it was ok; we're more of a plain stuffing type family. - 1/4/09

    Turned out very well, though I would recommend not leaving it much past the 7 hour mark, pork got a little dry. Was a little confused about the liquid portion, recipe said to add more water if needed, but I didn't really know what that meant, and stuffing did turn out very soggy. Was still good! - 1/23/14

    Trying this out tonight. I am not a huge pork fan but will try it once and see how the family likes it. I love the fact that is has the veggies and fruits in it also. :) Will review later as far as taste goes but it was easy to put together and will be great on busy work nights. - 11/17/11

    This recipe is good but wouldn't be my favorite. It is a little too rich in taste. An alternative would be to make less stuffing and serve it with rice and a vegetable. The sweet tasting stuffing is good but too much when served on it's own. - 9/15/09
