Ingredients

    8 Perdue Hot Italian Turkey Sausage Links
    2 Large Green Bell Peppers (cut into 1/2" strips)
    1 Large Onion (cut into 1/2" strips)
    1 14.5 oz can of diced tomatoes, no salt added
    Nonstick Spray, butter flavor

Directions

Spray pan lightly with cooking spray. Saute peppers and onions on Medium High in large skillet until slightly softened.

Turn heat down to Medium Low. Nestle Links into the mixure allowing them to touch the bottom of the pan. Turn once after 5 minutes or after slightly brown on each side.

Turn down to low and add tomatoes. Cover and let simmer for 25 minutes. Uncover and allow some of the liquid to cook off, approximately 5-10 minutes.

Serve over brown rice.

    I made this into a hoagie! I found whole wheat, low carb hoagie rolls at Publix and tore out some of the middle, spooned in the sausage and peppers, topped with fat free mozzarella and I was in heaven! Next time, I'll spoon the leftovers on pasta! - 3/28/09

    This is so good. I used Johnsonville Smoked Turkey Sausage today. Sometimes I use my own homemade venison sausage or my chicken/turkey sausage. You can't go wrong with this recipe. Plus, it's so easy! - 1/26/09

    This was delicious!! We love sausages any way and this was a very good way to have them. We cut up the sausages into rounds and served over wild rice. Other than that we didn't change a thing. - 9/1/09

    I cooked this tonight and just finished eating. DElicious! Also very easy and fast. I used one red and one green bell pepper for color and used garlic, basil, and oregano diced tomatoes.     I like this recipe. I used 4 peppers and regular pork Italian sausage. Skipped the onion and sauce. Calories were higher but still much less than the traditional recipe route. Next time I will use turkey sausage and crushed tomatoes. - 3/13/10
