Introduction

Ingredients

2 tbs lemon juice
1 (14 oz) can chicken broth
2 tbs honey
2 tbs soy sauce
1 tsp olive oil
1 medium onion - chopped
1 cup long grain rice - uncooked
1/2 tsp black pepper
1 tbs parsley
8 skinless chicken thighs
Directions
In a large skillet with tight fitting lid heat olive oil and brown chicken thighs.
Remove thighs when browned and add onion.
Saute until onion is soft.
Add lemon juice, chicken broth, honey, soy sauce, black pepper, parsley, and rice. Stir to combine.
Add browned chicken thighs on top.
Cover and simmer for about 30 minutes or until chicken is done and liquid is absorbed.

This was delicious! Like others, I made it with brown rice, but I cooked the meat and sauce in the slow cooker, then used liquid from that to make the rice instead of water to give it the flavour of the dish. It was easier than cooking it on the stovetop and all I had to do was add a veggie dish. - 8/5/10

I made this for my family... usually my kids are very hesitant when it comes to trying something different than the normal chicken on the grill. They absolutely loved this..infact, we had made it twice in one week because they loved it so much. It was very easy to make and very light as a meal. - 9/22/09

Very good but more of a weekend dish time wise. Don't crowd the pan when browning, try to get a nice crispy skin. I'm going to try rubbing some thyme and rosemary under the skin to add more flavor to the chicken next time. Also recommend draining off the grease before adding the onion-the rice was - 2/2/15

Great meal for a family dinner. The rice was absolutely delicious and my whole family liked it, even all four kids which rarely happens. I made an extra half cup of rice and with that this easily fed all of us (the kids range in age from 3 - 9) with a spinach salad on the side. Will make again! - 5/2/11

Added garlic with onion. Put all ingredients in crock pot with drumstick/thigh quarters skinned. Cooked 4 hours. Removed chicken from sauce. Used sauce plus needed chicken broth. When rice was done added 1 pound frozen peas. Served rice/peas with chicken on top. GREAT success. Thanks for the recipe. - 4/30/11
