Ingredients

Garlic, 2 cloves minced
Lea & Perrins, Worcestershire Sauce 1/4 tsp
Creole Seasoning 1 tsp
Pepper, black, 1 dash
Parsley 1/2 tbsp chopped
Plain bread crumbs 1/4 cup
Parmesan Cheese, grated, 2 tbsp
Snapper (fish), 16 oz
Butter, unsalted, 4 tbsp
Fresh Chives, 1 tsp chopped
Directions
Place snapper fillets in a baking dish which has been sprayed with a butter-flavored baking spray.
In a skillet, melt butter with garlic, Worcestershire sauce, Creole seasoning blend, pepper, parsley, and chives, if using. Cook on low for 2 minutes, just to blend flavors. Brush both sides of fish fillets with the butter and herb mixture. Toss bread crumbs in the remaining butter mixture; sprinkle over the fillets. Bake at 400° for about 12 minutes, depending on thickness of fillets, until fish flakes easily and is no longer translucent.

I made my own creole seasoning (1.25 TBS paprika, 1 TBS salt, 1 TBS garlic powder, .5 TBS onion powder, .5 TBS black pepper, .5 TBS cayenne pepper, .5 TBS dried leaf oregano, .5 TBS dried leaf thyme). The fish was cooked perfectly and the seasoning was flavorful. However, snapper is not my fave. - 12/6/09
