Ingredients

    3 Eggs
    1 Cup Granulated Sugar
    1 Cup unsweetened applesauce
    2 Cups shredded Zucchini
    1 tsp Vanilla extract
    1/2 cup Oat Bran
    2 Cups Whole wheat flour
    1/2 Cup All purpose flour
    2 tsp cinnamon
    1/4 tsp ginger
    1/4 tsp nutmeg
    1/2 tsp salt
    2 tsp baking powder
    1 tsp baking soda

Directions

Mix eggs, sugar, Applesauce, shredded, zucchini and vanilla

Add whole wheat flour, all purpose flour, oat bran, cinnamon, ginger, nutmeg, baking powder, baking soda and salt

Mix well. Spoon into muffin pan. Spray pans with cooking spray and bake in over for 20-25 minutes at 325 (F) or 162 (C)Should make 26 muffins.

    Delicious and not dry at all! Check early with a toothpick. Do not overcook. Finely shred the zucchini and pack to measure. I will make them often. I made with 6 egg whites no yolks, lower cholesterol that way. Really enjoyable. - 7/23/10

    Thank you for this great recipe!!! I only changed one thing: I replaced the sugar with honey. It tastes wonderful! I brought the muffins to work yesterday and everybody loved them (two colleagues asked for the recipe). I will making them again! - 2/1/11

    Very Good
    I didn't find them dry but I did use a little more than 2 cups grated zucchini and also added carob chips. Also I didn't have oat bran so substituted wheat bran.
    My 1 and 4 year old girls helped me make them and they were easy to make. We'll be making them again for sure!
