Introduction

Tired of the same green leafy salad? Tired of the same green leafy salad?

Ingredients

    1 11-oz. can mandarin orange segments, chilled and drained1 mango, peeled and cubed1 medium avocado, peeled, pitted and cubed1 medium cucumber, peeled, seeded and cubed1 red bell pepper cut into thin strips3 tablespoons lime juice2 tablespoons ginger flavored soy sauce1 tablespoon stir fry sauce2 tablespoons brown sugar2 tablespoons minced red onion2 tablespoons minced cilantro

Directions

In large bowl, toss together mandarin oranges, mangos, avocado, cucumber and bell pepper with lime juice. Combine remaining ingredients for dressing small bowl; blend well and toss gently with mandarin orange mixture. Stir in cilantro and serve immediately.

Serves 6

    I made this recipe for a very un-picky family, and nobody really cared for it. I LOVED the look and flavor BEFORE I added the dressing. But the dressing made it look very unappetizing, and muddied the flavors. I plan to try the basic salad recipe, but add a brighter dressing -- probably citrus. - 1/11/09

    I really enjoyed this salad and will make again. I did add a fair amount of minced fresh ginger to my soy sauce and let it sit for a few hours before mixing the salad. I love ginger and think it did add to the dish. - 1/25/09

    I prepared this salad with no substitutions. I liked the flavor and variety of ingredients but will cut the recipe in half before making it again as there are only 2 in my household. I would also reduce the dressing ingredients by at least 1/3. Best eaten day it is made. - 1/10/09

    Absolutely loved this salad. The combination of veggies with fruit is wonderful! I've made it a couple of time, substituting whatever fruit looked best at the market - papaya or melon works well, too! - 10/12/08

    I thought this was a refreshing salad, almost like a salsa. I used it for a side to salmon and it was very good. I think next time I will cut down on the dressing just a bit. I used some grated ginger to flavor the soy sauce. YUM! - 7/18/08

    I LOVED this salad! Top rated for taste! I only had regular soy sauce, but I added a TBL. of chopped ginger for flavor to make up for it. You just can't keep it in the fridge for too long because of the avocado, but it will go fast! LOVED IT. - 7/15/07

    After reading the reviews I made a different dressing using some of the reserved liquid from the mandarin oranges, the juice of one lime, 1 T extra virgin olive oil, fresh ginger and shallot. It was a refreshing burst of flavor! - 2/2/10

    The mango and mandarin oranges sound great but I dont care for avacado Will for sure make this salad with some substitions. I am trying to eat healthy. and get more fruit in my diet. - 1/10/09

    Cilantro is the leaves of the coriander plant therefore it gives a slight anise flavor. Jimica (the "J" is pronounced like "H") is a root vegetable also with a slight anise (licorice) taste. Goes very well with the oranges. - 1/10/09

    josephinebat10-U.S. has bottled stir-fry sauce.Try this as subs.-1/4cup lite soy sauce, 1/4 cup water, 1/4cup packed brown sugar,2 Tbsp.dark sesame oil,1 garlic clove,minced, 1 Tbsp.fresh grated ginger. Jicama is a veggie-esp. used in Mexican cooking here. - 7/14/08

    Sounds like a great salad will try with pork as an earlier suggestion, but what is classed as stir-fry sauce, also what is jicama as it was also in a suggestion. Living in Australia we don't have these ingredients, would love to try something similar in place of them, any suggestions. - 1/10/08

    To MBJoseph and others: leave the avocado pit in the bowl and it will keep the salad from turning brown. I am going to try this soon and add diced jicama for more fiber. I bet it is good along side pork chops or chicken. - 10/22/07
