Introduction

This recipe uses mushrooms to replace half of the ground beef in a traditional chili recipe. Using mushrooms lowers the calore/fat content while retaining the meaty texture. Even my 8 year old mushroom hater gobbles it up!

Ingredients

    1 T. Olive Oil
    8 oz. mushrooms, chopped
    1 med. onion, diced
    1 lb. Ground Beef, lean
    2 cloves garlic, minced
    1 14.5-oz. can pureed tomatoes
    1 14.5-oz. can diced tomatoes
    2 14.5-oz. can kidney beans
    3 T. chili powder (or more to taste)
    2 t. salt

Directions

1. In a large pot, saute onions and mushrooms in olive oil until tender.

2. Add ground beef and garlic, stir and break up the meat until cooked through.

3. Add canned tomatoes, kidney beans, chili powder and salt. Mix well and bring to a boil.

4. Simmer over low heat, with occasional stirring, for at least two hours.


Serve over rice with avocado, shredded cheese, and sour cream for toppings.

    I loved this recipe. My husband who has a vege phobia loved it too. The mushrooms were the perfect addition to a great chili, I also added a little bit of cumin for that smoky chili flavor. - 10/25/11

    I added about 2 teaspoons of sugar to cut the acidity in the tomatos, and 3 teaspoons of coco powder to give it a bit more depth of flavour.
