Number of Servings: 6

Ingredients

    1 cup egg whites
    non-stick olive oil spray
    1/2 tsp black pepper
    16 oz fresh spinach
    1 1/2 cups of diced cauliflower
    1/2 cup diced mushrooms
    8 oz non-fat cottage cheese
    8 oz Greek yogurt
    1/2 cup reduced-fat cheddar cheese

Directions

1. preheat oven to 350 degrees
2. Spray with non-stick sray
3. Saute onions, cauliflowerand mushrooms.
add to egg whites and cottage cheese and yogurt and cheddar cheese.
4. Stir until combined.
5. Bake in oven for about 45 minutes or until slighly bubblying. cool for 10 minutes before serving.

    This was yummy. I have an aversion to the flavor and texture of hot cottage cheese, so I substituted part-skim ricotta cheese. I substituted portabella mushrooms for the button mushrroms for some earthiness and added cubed turkey ham and some hominey for creaminess. - 11/9/11

    This was really very good with the Greek yogurt and cottage cheese in it. Very creamy texture and you really can be creative, putting in whatever you have in your refrigerator as long as you have the yogurt and cottage cheese in stock. - 3/1/09

    I put in 1 sliced plum tomato instead of cauliflower and only used 6 oz nonfat greek yogurt. I came up w/ 97 cals per serving. It's VERY good! - 1/16/09

    This was a wacky recipe. It told me to saute onions, but onions were not in the ingredients. As to the size of the container I was to bake it in.....? I winged it, added 3 eggs to the egg white mixture, and am hoping for the best. - 1/13/09

    I am not a cook but I am a proof-reader and this recipe was not proofed before posted. I have all the ingredients but unsure as how to proceed. Do I mix the eggs up before I add other stuff to them? I read elsewhere to add 1/2 c. onion and microwave spinach 4 min. but nowhere tells when to add. - 11/18/12

    A few problems with the recipe as stated;I guessed there should be 1 Cup chopped onions to be sauteed. I didn't have cauliflower, so I subbed 1 C chopped fresh broccoli. i wasn't sure whether to add the spinach to the sauteed vegs to wilt, I will next time. - 2/20/11
