Ingredients

    1 can Hormel 97% Fat Free Breast of Chicken in water
    2 slices of 100% Whole Wheat Bread
    2 slices Sargento Reduced Fat Swiss Cheese
    1/2 tbsp Hellmann's Low Fat Mayonnaise
    2 Baby carrots, grated or chopped to your liking
    3 Grape Tomatoes, chopped
    1 tbsp Scallions, chopped
    1 or 2 tbsp Sweet corn
    dash of pepper
    dash of garlic powder

Directions

Makes 2 open sandwiches
Drain water from can of chicken. In a bowl mix chicken, carrots, scallions, corn, tomatoes, mayo and season to taste. Toast the bread. Put a slice of cheese on each slice of bread, then spread the chicken salad respectively atop the cheese. Enjoy!

    Since I'm not in the States, I used cubed baked chicken and plain yogurt (staying away from mayo!) and Gouda cheese and it was a tasty sammie! Thanks for the idea Julie! - 12/22/08
