Ingredients

    4 cups fresh, canned or frozen corn kernels (I use frozen white corn)
    2-16 oz cans black beans, drained and rinsed
    3 medium tomatoes, chopped
    1/4 cup chopped fresh cilantro
    1/2 medium red onion, chopped
    1/2 yellow or red bell pepper, chopped
    2-3 jalapeƱo peppers, seeded and minced
    Dressing:
    1/4 cup fresh lime juice
    1/3 cup red wine vinegar
    1 Tablespoon Dijon mustard
    2 teaspoons ground cumin
    3 Tablespoons olive oil

Directions

If using fresh corn, cook and cool thoroughly. Rinse beans. Chop vegetables and add corn, beans, tomatoes, cilantro, onion and peppers. In a separate bowl, whisk together dressing ingredients. Pour over vegetables and toss well. Cover and refrigerate at least two hours. Can be served as a side salad, or appetizer with dipping corn chips.

    I've tried a very similar recipe before..this stuff is great! You can also "marinate" in your favorite italian dressing. Good stuff! - 1/16/09
