Introduction

This is a favourite in my house. It may sound weird but it is really good. We eat it for dinner, but it would be good for brunch.

(I use the fake crab ... "sea legs" and like it more! I have also made it with cooked chicken)

Number of Servings: 4

Ingredients

    2 cups mashed potatoes
    1 cup fat-free sour cream
    1 Tbsp. Old Bay Seasoning
    1 tsp. dill week
    1 tsp. onion powder
    4 large eggs
    8 ounces "sea legs/fake crab"

Directions

Mix the mashed potatoes, sour cream, seasoning and eggs until smooth and creamy. Fold in the sea legs/fake crab.
Place into a cold oven and then turn on to 350 degrees. Bake 45 minutes.
It will be puffy and still kind of mushy. Let sit 5 minutes then serve hot.

    INSTANT POTATO BUDS... they have the "strength" to handle it better than a potato that you mash ... if you don't like instant, make sure you have the right kind of potato as baking and mashing end up completely different.

    This sounds good and will probably try it. However the sodium at 1155.5 is very high for one setting for someone with high blood pressure. But truely sounds tasty! - 1/12/09

    Omit the OldBay and use salt-free seasonings of your choice.....

    Sounds good, I have a Question, Do you poor this into a cake pan/dish or do you dish it onto a cookie sheet like crab cakes? - 12/27/08

    Sorry .... I put it in a 2 quart corningware baking dish (a deep one about 8 inches across) as it puffs up in the dish...be sure to spray with pam due to the eggs.

    Delicious - I added a little red & green pepper and substituted McCormick Salt Free for 1/2 of the Old Bay. It still is pretty high in sodium so it will be saved and enjoyed on "special indulgence" days. - 3/1/10

    I know that the sodium was high --- my BP is too low so I don't count it myself...and as it is only 1/5th of what a daily RDA is, it shouldn't be overkill.

    If you leave out or use something other than OldBay, the sodium will be a lot lower
