Ingredients

    1 cup Uncle Ben's Whole Grain Brown Rice
    1 tablespoon Smart Balance Buttery Spread
    1 cup chopped onion
    1 cup frozen peas
    1 teaspoon [or one clove] chopped garlic
    1 teaspoon Knorr Chicken Bouillon

Directions

Prepare the rice per package directions, adding the bouillon to the water prior to adding the rice.

Meanwhile...In a skillet, over medium low heat, melt the Smart Balance Buttery Spread; add the onion and garlic and cook over medium low heat until translucent. You do NOT want the onion and garlic to be BROWNED.

Add the frozen peas, stir, and cover skillet until tender [about ten minutes].

When rice is done, add to the veggie mixture in the skillet and serve.

Makes six side item sized servings.

    I made this for dinner tonight. I pushed the rice to the side of the pan and cooked up 2 eggs on the other side until they were scrambled. I mixed it in with the rice - just like stir fry. Yummy! - 1/14/10

    My husband hates brown rice, but he loved this recipe. I cooked the rice in the rice cooker, then followed the rest of the reciped as printed. The rice was moist and tender, not at all chewy! - 7/20/10

    Whoops! Commented earlier on the WRONG recipe (that comment was for the cheesy spaghetti squash- also good)!

    This recipe was GREAT! I am getting over a cold & it is the first dish I have been able to TASTE in days. Loved it! I'll make it again and again. And so easy!

    I changed this for a picnic by using vinegar and oil, adding, corn, black beans, tomatoes, and parsley. I deleted margarine. Still used rice and onions but deleted boullion because of salt free diet. It was great but I like the other too! - 8/1/09
