Ingredients

    2 tbsp Fresh Lime Juice
    1/4 c chopped red onion
    1/2 tsp ground cumin
    1 tbsp hot sauce (Frank' s Red Hot or Tobasco)
    1 stalk celery
    2 roasted red peppers (finely chopped)
    1/4 c cilantro (finely chopped)
    2 (15-ounce) cans of black-eyed peas, drained
    2 tbsp extra light olive oil
    2 tsp fresh grated ginger
    salt and pepper to taste

Directions

In a large bowl combine all ingredients and season with salt and pepper (salt and pepper very important). Toss and serve.
