Ingredients

    3/4 whole wheat flour
    1 tsp baking powder
    1 large carrot
    2 egg whites
    2 tbsp unsweetened cocoa powder
    1 cup unsweetened applesauce
    1 serving kellogg's all-bran cereal
    3 tsp splenda
    1/4 tsp cinnamon
    1/8 tsp nutmeg


Directions

Preheat oven to 350`F. Spray a 9-in. square baking pan with non-stick cooking spray.
In a small bowl, mix together flour, baking soda and cocoa powder.
In a separated bowl, combine carrot, egg whites, applesauce, cereal, splenga and spices, mix well thoroughly.
Stir all the ingredients and mix well. Pour the batter into the baking pan.
Bake for about 40 min(or until a wooden toothpick inserted in center comes out clean)and enjoy~

    Pretty Good- I used Fiber One instead of allbran. It didn't say to but I pulsed it in the food processer. I also added a little more cinnamon. I topped it with FF Cream Cheese Frosting submitted by "Trixbunnie" & that helped A LOT! Overall good for a 100 calorie piece of cake w/frosting! Thank you! - 1/9/09

    Interesting recipe. I could really taste the bran flakes & splenda. One note, in the ingredients, you list "baking powder" but in the recipe, you have "baking soda." I used the powder. Health nuts may love this one, but I'm not sure about others. I did like it, though. - 1/8/09

    This sounds really good and since I am also a diabetic, would easily fit into my meal plan. If you want to replace splenda with sugar, it is interchangable whatever the amount of splenda, use the same amount of sugar. - 1/1/09

    Do you think I could substitute Kashi GoLean instead of All Bran? Also, I don't use sugar subs... do you know how much sugar or honey equals 3 Tsp of Splenda? Sounds good! Thanks. - 1/1/09
