Ingredients

    2 Skinless Chicken Breast
    1 can Cream Chicken Soup
    1 Can Cream Mushroom Soup
    1/4 c Diced Green Chilies
    10Tbsp or 1c Salsa Verde
    1/4 c Petite Cut Tomatos w/ Jalapenos
    8 La Tortilla High Fiber/low Carb/Fat Whole Wheat Tortillas
    2c Colby/Jack Cheese

Directions

Boil Chicken Breast
(Shred when cooled)
Mix both soups, cheese,chilies, salsa verde, and tomatos in large bowl.
Remove approximately 1/2 of the mixture to another bowl to be used later.
Add shredded chicken to mixture remaining in bowl.
Lye tortilla flat and fill with approximately 3tsp of the chicken mixture, roll and place in baking dish.
Repeat with all 8 Tortillas.
Pour remaining mixture with out chicken over top of enchiladas and bake at 350 for 45 minutes.
Enchiadas should be slightly golden around the edges. Let stand for 15 minutes and serve.

    I did the nutritional info and I agree, way off. Using fat free soups and low fat cheese still way off. Total carbs are more like 14 net carbs with the calories and fats about doubled. Like the recipe and still fits in to my low carb diet but should keep this in mind when planning daily carbs. - 1/8/10

    The nutrition information is off because if you look at the "Ingredients Details" list only one tortilla is listed. Even with that I still came up with about 200 calories per serving. But it still looks good. I'll have to try it sometime. - 4/20/09

    This meal was easy, but be sure to boil the chicken ahead of time. Took me 10 minutes to put together after that. The portions are FILLING which I love...my inlaws, husband, and 8 year old loved it! - 3/3/09

    Incredible!
    Very good recipe but it should not be in the low carb catagory. Using the Spark nutrition calculator it has 35g Carbs per serving (based on 8 serv per recipe) but is Low Fat: only 12g
    I will make it again but as a special treat after I lose the weight I'm working on now.
