Introduction

Number of Servings: 4

Ingredients

    1 lb pork tenderloin cut into medallions
    2 apples, cored and sliced
    1 tbsp olive oil
    1/8 tsp cinnamon
    1/tsp nutmeg
    3 tbs butter
    3 tbs brown sugar
    salt and pepper to taste

Directions

heat oil in skillet and cook pork medallions, turning once until browned and cooked through. Put on a plate and keep warm in oven. add butter to skillet to melt, then add rest of ingredients stirring to mix, then reduce heat, cover and cook until apples are mostly soft. remove lid and allow for some liquid to cook off then pour on top of medallions and serve! 4 servings

    I actually made this in the slow cooker instead of on the stove and it turned out delicious. I just put all of the above ingredients with the pork tenderloin, I did add a little bit of unsweetened apple sauce and it turned out really really good. - 9/29/11

    I made this tonite for dinner and it was a big hit! I cooked the apples in a separate skillet while the medalions were cooking. I used less butter (2tb) and Splenda Blend brown sugar, about 2 tb. Very easy and quick! This recipe is going to be used again and again, I'm sure! Thanks for sharing - 11/8/10

    Perhaps a bit less nutmeg, but overall a fantastic meal. I also cooked the apples first to just under what I desired & kept warm in a covered serving dish. Even my very traditional "steak, potatoes & corn" man requested this put "in the rotation" of meals we make. Wonderful! - 2/1/10

    Very Good
    Very tasty. I chose to cook the apples first and then the pork. That way the meat doesn't overcook while staying warm. I used my safflower margarine instead of butter, sacrificing a little flavor. I'll make it again. THANKS - 7/15/09
