Introduction

Makes me feel like I'm having something naughty. These muffins satisfy my sweet tooth and my love for pumpkin. Low fat and yummy. Makes me feel like I'm having something naughty. These muffins satisfy my sweet tooth and my love for pumpkin. Low fat and yummy.
Number of Servings: 12

Ingredients

    1 c. pumpkin
    1 6oz. container of low fat vanilla yogurt
    3 egg whites
    1 1/2 c. whole wheat flour
    1 tsp. baking soda
    1 tsp. baking powder
    1 tsp. pumpkin pie spice
    3/4 c. brown sugar

Directions

Combine dry ingredients in a mixing bowl.
Combine wet ingredients and add to dry. Stir wet ingredients into the dry ingredients. Do not over mix or muffins will be tough. You can either line a 12 cup muffin pan with paper liners or spray with non-stick spray. Divide batter into muffin cups. Bake at 350 degrees for 25-30 minutes.
