Introduction

The best soup ever! Great for snow days! The best soup ever! Great for snow days!
Number of Servings: 10

Ingredients

    4 cups potatoes, peeled and cubed
    6 Tbs butter
    6 Tbs flour (I use white)
    1 med onion, chooped fine
    cayenne pepper (to taste)
    black pepper (to taste)
    5 cups milk (1%)
    1/2 tsp salt
    2 cups ham cubed
    2 cups low fat shredded cheddar cheese

Directions

Cook potatoes in stock pot until tender, reserving 1 cup of the potato water.
In same stock pot cook onion and butter for 3 minutes, add in flour and cook for 3 more minutes.
Mix in cayenne pepper and black pepper.
Return potatoes to pot and add in reserved water, milk, and salt.
Stir well and add in the ham and cheese.
Heat though until hot and cheese is melted.

Makes about 10 1 cup servings

    Very good hearty and comforting soup! I used half the amount of flour, butter and milk. I added 3 chopped as well carrots and frozen spinach and it tasted great. Thanks for sharing. - 4/17/11

    I made this last night for dinner. Wow it was so easy and so good. I did add two grated carrots and one finely chopped celery stock. Hubby even liked it. (He doesn't do soup.) - 2/11/11

    This was exactly what I was looking for. Great consistency and easy to make. We had it with out the ham. It's easy to make it your own by adding herbs and whatever seasoning you want. Will become a staple in our menu. - 1/5/10

    Very good soup.I added a little more salt, black pepper, and cayenne pepper and also a couple of tsp of parsley.I didn't have reduced fat cheese so I only put in 1 cup.Both me and my husband really enjoy this soup.Thanks for a great recipe! - 9/4/09

    Very Good
    Very nice soup. Good consistency and fairly easy to make. I added carrots and left out the onions because my kids won't eat them. Kids both ate it and said it was good. My husband said it reminded him of creamed chipped beef because of the milky base. Will more than likely make again. - 2/5/09
