Introduction

This is a tasty muffin and they freeze well for a quick breakfast with a piece of fruit. This is a tasty muffin and they freeze well for a quick breakfast with a piece of fruit.
Number of Servings: 12

Ingredients

    Banana, fresh, 3 medium
    Egg, fresh, 1 medium
    Granulated Sugar 1/2 cup
    vanilla 1 tsp
    *Flour, white, 1.5 cup
    Baking Soda, 1 tsp
    Salt 1/2 tsp
    Walnuts, 7 halfs chopped
    mini choclate chips 1/2 cup

Directions

Preheat oven to 350. Mash bananas in a larg bowl add egg,sugar and vanilla. In a seperate bowl mix flour, baking soda and salt. Slowly add four mixture to wet mixture and mix until all combined. Mix in choclate chips at the end. Line or spray a 12 muffin pan. Spoon mixture into pan the cups should be about 3/4 full. Sprinkle with walnuts and bake for 30 minutes.

    I used this recipe as a jumping-off place for my own version. I used 2 bananas; pecans instead of walnuts; added 1/2 cup raisins. I do not enjoy totally no-fat items. So I started with 1/2 cup butter. It is very important to me JUST TO COOK SOMETHING. thank you for helping me do just that. - 8/3/10

    Very easy and very good! I used 1 cup white flour and 1/2 cup whole wheat flour. Only baked for 22 minutes which was plenty. Will definately make again! - 2/2/09
