Ingredients
-
1 lb extra-lean ground beef
1 cup lentils
2.5 cups water
3 cups cooked rice (I used minute rice the first time)
2 tbsp honey
2 tbsp soy sauce
1 tbsp walnut oil
1 clove garlic, minced
1/2 tsp powdered ginger
1/4 tsp onion powder
1 tsp lemon & pepper salt
sprinkle of crushed red pepper
1 tsp cumin
1.5 tsp curry powder
Directions
Brown the ground beef in a skillet, rinse or drain well. Combine with the rest of the ingredients (except the rice) in a small crock pot. You can use fresh onions instead of onion powder, but all I had was the powder. I also estimated the water, may have to use more or less depending on desired texture. Cook on low 4-5 hours. Add the cooked rice just before serving. Makes approximately 6 servings, 1 cup each.

This recipe is fabulous. I am trying to loose weight with a couple of work colleagues and I made this and brought it to work for lunch - we all really enjoyed it....but can someone please tell me how I can now get this into my Meal Planner? I have tried to find how, but haven't been successful. - 9/8/09

I actually used lean ground turkey and the total is near 620 calories. I did the calculations because I was subbing the turkey. I use http://caloriecount.about.com/cc/recipe_an
alysis.php so I am going to go with a small serving (1/12th of the recipe) tonight, since it's made. Sparks accuracy? - 6/2/09

It's possible that when I selected 1 cup of lentils on spark's recipe calculator, it meant cooked, when I meant uncooked. Also, I use the lowest calorie choice for the ground beef, as I drain mine with hot water to remove any grease.
