Ingredients

    Cauliflower, frozen, cooked, 4 cup (1" pieces)
    Sour Cream, .25 cup
    Chopped Chives, 1 tsp
    Colby Cheese, .25 cup, shredded
    Monterey Cheese, .25 cup, shredded
    Hormel Bacon Bits, 2 tbsp
    Butter, salted, 1 tbsp
    Garlic powder, .5 tsp
    Salt, 1 dash
    Pepper, black, 1 dash

Directions

Cook cauliflower until tender [I use frozen and the microwave with NO water added for 10 minutes on high]. Preheat oven to 400F. Chop fine with pastry blender, potato masher or knife. Add all ingredients together in a medium bowl, fold until mixed. Use cooking spray on 4 seven ounce ramekins or other small oven safe dishes and spoon mixture into dishes. Place all small dishes on a cookie sheet for easier handling. Bake for 15 minutes on middle rack and then broil for a few minutes until top is golden brown. Makes 4 servings, but you may want to make extra, cuz...OMG this is good.

    I came looking for a new cauli recipe. I used what I had on hand, low fat sour cream, 6 green onions, turkey bacon bits, 1/4 cup each asiago and parmesean cheeses; omitting the butter and garlic powder. We a thin bread crumb covering on top and sprayed lightly with butter flavor Pam. - 2/24/12

    Wonderful recipe. I love potatoes but a also love cauliflower and have no problem substituting. I admit I added 2T of cream to this recipe when I blended it to ensure nice creamy "potatoes" but I know it was still much healthier than my twice baked Idaho potatoes that I used to make frequently! - 1/19/15

    I boiled the cauliflower in chicken broth ( 2 cans low sodium), 4 peeled garlic cloves, and some fresh rosemary, then followed the steps above! It was delicious. Cooking the garlic helped to mellow out the flavor a bit, but still great! I would highly suggest this to fellow dieters/ potato lovers! - 6/28/11

    I just prepared this dish for lunch. In my case, I used fresh cauliflower and smashed with the potato masher removing water on the go. Yet, it easy, fast, and yummy. Wondering after trying the texture if I could have used cauliflower rice instead. - 12/9/19

    YES! You could have. Back when I wrote this recipe, we didn't have that just sitting in the frozen section. LOL And I didn't have a ricer. And I didn't have a potato masher. So I used a pastry cutter or a sharp knife. But Cauliflower rice would be great, any flavor, I think ! Thanks for trying it!

    Really good! Used turkey bacon for the bits. Our "mashed" cauliflower were a little chunky, but tasted and looked great in baking dish - we used a pie pan. - 2/5/17

    My husband is a very picky eater and when I fixed this the first time he only heard the word potatoes and tried it. He actually liked it. He was surprised when I told him it was cauliflower. I used cream cheese instead of sour cream and Bacos instead of chives & left out salt, pepper & garlic. - 4/20/13

    I used Fat Free Sour cream and just a 2% shredded mexican blend (its all i had) I used a little bit more of each then called for. I didnt use any butter just cooking spray. I used chopped red onions instead of chives (again i didnt have any) and cooked up 3 strips of turkey bacon. YUMMMMM!!!!! - 5/17/11
