Introduction

Ingredients

    6oz uncooked shrimp
    1 bell pepper cubed
    1/2 cup onion cubed
    1.5 cup orange juice
    1 tblsp corn starch
    2 tsp ginger
    salt and pepper to taste
    chili pepper if you like spice

Directions

marinate shrimp in OJ over night.
In large skillet heat marinade, ginger, salt and pepper. Add onions and peppers and cook until soft. Stir in cornstarch to thicken, add shrimp and cook through.
I add red chili peppers for heat, you can also add many more veggies to stretch the servings.
Serve over brown rice. Nutritional value does not include rice.

    This was delicious!! I also used fresh ginger, and served it over jasmine rice that I boiled with more fresh ginger & some lemongrass. The flavor was subtle, but complemented the orange shrimp perfectly. - 6/6/09

    This was pretty good and easy to make. I didn't need to add the full amount of cornstarch, but I did add extra oj. By the time the veggies cooked much of the sauce had evaporated. I used fresh ginger (1/4 tsp) and added red pepper flakes for spice. - 2/3/09
