Ingredients

    1 pound lean beef stew meat
    1 can low-fat cream of mushroom soup
    1/2 cup water
    1 packet dry onion soup mix
    8 oz fresh mushrooms (whole or sliced, your preference)

Directions

Brown meat in skillet over med-high heat. You can skip this step to save time and the recipe will still be great. I just think it gives the meat more flavor and helps it hold together better. Place meat in 4 quart crock pot. Place mushrooms on top of beef. Combine soup, water and soup mix and pour over mushrooms and beef. Cook on low for 6-8 hours or high for 3-4 hours.

Tastes great over brown rice or hot cooked noodles (neither are included in calorie count).

    Just made this for dinner tonight, when making it I realized that I didn't have onion soup mix, so I chopped up an onion, threw in some sherry (1/4c.) some worchestershire (few teaspoons) and some beef boullion concentrate. and its turned out excellently! Just had to share! Thanks!!

    I've been making this for years as well. However, most times i throw in all kinds of veggies. Basically, this is my way of getting rid of left over veggies. Celery, onions, carrots, green beans, corn, etc. - 2/4/09

    I made this last night and my entire family liked it, even my husband that doesn't like anything healthy. My only complaint is that it was quite salty. The next time ai make it I'll use low sodium soup. Maybe that will make it a little less salty. - 2/24/09

    EASY. I used top round steak (store special) then I added 1 1/2 c plain yogurt (like sour cream) and a pck of cream cheese. Makes 8+ servings after adding a pck (serves 8) of cooked whole wheat noodles. It's in my cookbook AND on my nutrition tracker. Lots of ways to dress this up!! THANKS!! - 3/2/09

    This was very good. I used 6 pounds of meat though, so I'd have leftovers, but cut the mushrooms and soups in 1/2. Served it over whole wheat egg noodles. Very simple and fast to throw in the crockpot in the morning. Our neighbor was over for supper and he asked for the recipe! - 2/21/09

    Made today..was sooo good. Used others suggestions in comments and put only .5 onion soup mix (with roasted garlic), added 1 cup celery, 1 cup carrots, 1 cup peas, and 4 small potatoes cut up. All together was only 409 calories for 4 portions, and it actually made at least 5 BIG portions, so less. - 11/17/10

    This dish was OK. Everything turned out tender. I like the mushrooms and beef. It is a good spring board when you are figuring out the whole slow cooker concept. I don't think I'd make this recipe as it is again. - 1/25/10

    Recipe was very good. I have very picky eaters in my house and everyone enjoyed it. Plus, the slow cooker made it easy on me! I served it with corn and roasted potatoes...a lot of starches but I threw extra mushrooms in! Will make again for certain! - 10/29/09

    Knowing how salty Lipton's Onion Soup Mix is, I used low sodium cream of mushroom soup, and it was still wicked salty. I enjoyed the beef and mushrooms though. If I make again, I'll add potato since that should absorb the sodium better. - 10/28/09

    I took a few other's advice and used ony 1/2 pkg of onion soup mix and added a whole can (10.75 oz) and it was still very salty. The last hour I added one potato diced up and it managed to soak up plenty of the saltiness. - 4/13/09

    Smells yummy cooking all day! I served it over quinoa with sweet peas on the side. Might add some red wine or sherry next time. This was very salty and rich for me.     This came out pretty good for me. The meat was quite dry which is really counter intuitive. Maybe it's just the cut I used. I also tried to put in fresh ingredients instead of onion soup powder. I don't recommend substituting A1 for worchestershire! - 3/4/09

    Amazing! Ridiculously easy, and it rivals my parents' roast beef dinner (one of my favorite ways to splurge)! I grabbed the cheapest cut of meat I could find (which may have upped the calories a bit, but all things in moderation), and had a small serving of mashed potatos on the side w/ the gravy! - 3/3/09

    Too much sodium for 1 meal. Instead of canned soup & onion soup mix, use fresh chopped onions & low sodium beef broth or stock. Add other veggies & seasonings, black pepper, garlic powder, & you can thicken the gravy with either a flour/water slurry, or instant mashed potato flakes. - 11/9/20
