Healthy, crunchy, yummy chicken fingers that your husband & kids will love!
My husband was craving wings & beer & he was very happy with this healthy version.

Number of Servings: 4

Ingredients

    4 boneless, skinless chicken breasts
    4 cups of smashed up Cornflakes
    2-3 egg whites
    1 tsp. cracked sea salt (or to taste)
    1 tbsp. cracked pepper (or to taste)

Directions

-Prepare chicken breasts & cut lengthwise (about 4 cuts per breast)
-Smash up Cornflakes in a Ziplock bag & add cracked sea salt & pepper & shake, shake, shake. Place this mixture in a shallow dish.
-Place egg whites in a cereal bowl.
-Dip chicken in egg whites & let drip a bit & then roll in the Cornflake mixture.
-Place on a cookie sheet that has been given a spray of Pam
-bake at 400 degrees for about 15 minutes per side or until done (no longer pink - cuz pink chicken is not good for you unless your doctor is really hot & you'd like to visit him!)
-serve with various sauces (I like Sweet Red Chili Sauce, Honey Mustard, BBQ - or whatever floats your boat) and some crunchy carrot sticks.

There you have it - chicken yumminess!

    I make something similar using beaten whole egg with a drop of teriyaki sauce, then dipping in wheat germ adding crushed red pepper for seasoning. I like the olive oil PAM spray for flavor on this too. - 7/13/09

    wow! I made it for dinner and my daughter (picky teenage eater) kept commenting that it sounded gross. As a good mom, I made some plain baked chicken for her. Needless to say, the baked chicken went untouched and she went back for seconds! I would highly recommend it! - 4/3/09

    Very good, and easy to make. One tip: you can also use plain yogurt instead of the egg whites and I find it adds a litle extra flavor and makes the chicken juicier. Either way, a great recipe. - 2/1/09
