Ingredients

    1 tsp baking powder
    1 tsp cinnamon
    1/4 tsp kosher salt
    2 cups rolled oats
    4 tsp brown sugar

    1 banana, mashed
    1.5 cups skim milk
    1 egg, beaten
    1 tsp vanilla extract

    2 bananas, sliced
    4 tsp brown sugar

Directions

Mix dry ingredients together in bowl. Mix wet ingredients together in separate bowl. Add together.

Line only the bottom of 8x8 metal pan with parchment paper and spray pan sides with cooking spray. (Or, spray entire pan with cooking spray if you do not have parchment paper).

Place the slices from one banana on bottom of pan. Pour mixture over slices and then put slices from second banana on top. Bake at 375 for 26 minutes. Then sprinkle 4 tsp. brown sugar over top and put back in over on broil for just a few minutes to get a carmelized sugar topping. This can be 4-8 servings depending on how much you like. The nutritional info is based on 8 servings.

    The calories are way off on this recipe. If you click "Create a recipe makeover", but don't make any changes, it will come up with 159 calories rather than 241 as stated. - 2/17/13

    I made this recipe in muffin pans. I replaced the bottom banana with a cut up apple and added another egg for added protein (I used egg beaters). I will definitely make this again. Next time, I would probably just get rid of the banana on top and mix the apple or banana chunks into the batter. - 9/30/12

    This was my first time trying baked oatmeal and I'm in love! I'm not keen on bananas so subbed two of them for applesauce and added chocolate chips. Tastes so naughty! - 9/22/12

    I am not a big fan of oatmeal but I have been trying to eat more of it because I know the health benefits. I thought this was very tasty. I did add about a 1/4 cup of finely chopped pecan. - 5/24/09
