The calories are way off on this recipe. If you click "Create a recipe makeover", but don't make any changes, it will come up with 159 calories rather than 241 as stated.
I made this recipe in muffin pans. I replaced the bottom banana with a cut up apple and added another egg for added protein (I used egg beaters). I will definitely make this again. Next time, I would probably just get rid of the banana on top and mix the apple or banana chunks into the batter.
I used 2 eggs to increase the protein and it made a nice dense and easily package breakfast treat.
