Number of Servings: 6

Ingredients

    1 medium onion, minced
    4 cloves garlic, minced
    1 Tbsp cumin
    1.5 tsp red pepper flakes
    2 Tbsp olive oil
    4 cans (6 cups) black beans
    1 can (~2 cups) vegetable broth
    1 cup medium salsa
    2 Tbsp lime juice

Directions

1. In a large pot, saute onion, garlic, cumin, and red pepper flakes in olive oil for ~3 minutes.

2. Puree vegetable broth, salsa, and one can of black beans.

3. Add puree and rest of black beans to the onion/garlic mixture.

4. Simmer for ~30 minutes. Just before serving add lime juice. Serve hot.

Makes approx. nine cups of soup, or six 1.5 cup servings.

    This is really good - we made it as called for with extra dried chillis, added diced green chilis and a serving of jalepeno chicken meatballs (Costco) for some protein - 1/2/12

    I modified the recipe a little. Didn't make it as spicy and reduced the onions. I didn't have enough black beans so I used northern and kidney beans. Great recipe, the family really liked it! - 2/27/08
