Ingredients

1 lb. extra lean ground beef
    1 medium white onion, chopped
    6 garlic cloves, minced
1 16 oz can red beans
1 16 oz can dark red kidney beans
1 32 oz. can chopped or diced tomatoes
    1 c water
    3 T chili powder
    1 T ground cumin
    1 T cayenne pepper
    1/2 T black pepper

Directions

1. Brown ground beef on stove.
2. Add minced garlic and chopped onion and lightly saute.
3. In a large soup pot, or crock pot, combine tomatoes (do not drain), beans (drained and rinsed), water, and all the spices. (Do not add extra salt--chili powder has enough)
4. After the onions have softened a bit, add the ground beef mixture to the pot of tomatoes and beans. Mix well.
5. Cook on low heat on the stove for 2-3 hours, or on the crock pot, you can cook it at any setting--4,6, or 8 hours.

This was a really good chili...but very spicy! If you don't like heat--beware! My husband adds hot sauce to everything...he didn't with this one! We added an extra can of beans just to bump up the fiber...will make this again! - 3/3/10

I like to cook my own beans and save a little on the sodium, which I fight constantly.

I also like that this recipe lends itself to substitution -- turkey meat, different kinds of beans, with or without tomatoes. - 3/22/09

I made this for potluck at church and it was a BIG hit! I came home with just a little bit. I changed it up just a little because I didn’t have some of stuff, but YUM it was. Here’s what I changed: I used 2 cans of light red Kidney beans, 2 cans of (14 oz) diced tomatoes, chili seasoning, and b - 2/18/18

Added sauteed mushrooms, beef broth instead of water, celery, skipped cayenne and added a bit more chili powder. A few peppers for color and simmered 3 hours. Great fall meal. - 9/22/14

Great Spicy Recipe! I like wimpy spice chili (and have severe heartburn issues with regular) so I just cut back on spices.
I used: 4 cloves garlic, 1 T chili powder, 1 t. cumin, No cayenne, 1/2 t. pepper and 1/4 to 1/2 t. sugar. It was perfect for me and my mom. Hubby added more spice to his.

I added fresh chopped red pepper, cauliflower, celery, and carrots to add some veggies for my kids. Made it alittle less spicy for them too by leaving out the garlic and less chili powder. Also, substituted organic black beans for red kidney. beans. Loved it!!!! - 1/4/13

I made a mild version so that children can enjoy it too.
I did not add any cayenne pepper, and used just one tablespoon of chilli powder. Had to add extra salt, to taste.

Great recipe! We like our chili not quite so spicy so just cut down on the cayenne pepper (just a dash!) and it was perfect! - 11/21/11

Chili was great I did not use regular chili seasoning. I used one of those McCormick chili packets (hot), and I just added a liitle cayenne pepper, and not black pepper. I also added some chipole peppers in adobo, about 2 and some juice. Was great will use recipe again. - 11/14/11

smells great so far! i only used two dashes of the cayenne pepper and i substituted one of the cans of bean for pre-cooked lentils...turned out really well as long as you assume the cayenne pepper was supposed to be a teaspoon for extra-spicy. :) - 9/30/10
