Introduction

These low carb Pancakes are soooo good. They have a nutty flavor and are very satisfying. They are also SBD phase 1 friendly. (Flaxseed counts as daily nut allowence)

Try rolling up turkey sausages with the pancakes and drizzle with sugarfree syrup.

Take a table spoon or two of lowfat creamcheese and mix with splenda and vanilla and warm in microwave for a "frosting" to spread on top

Ingredients

    1/2 C - Egg beaters
    3 T Ground Flaxseed
    1 tsp Baking Powder
    1/2 tsp Vanilla
    Splenda
    Cinnamon

Directions

Whisk egg beaters in Pyrex measuring cup. Add Flaxseed, Baking soda, vanilla, splenda and cinnamon. Let stand for about a minute and mix again slightly. Pour onto skillet spray with Pam and cook like regular pancake.

Makes 2 decent sized pancakes.

    This is FANTASTIC! I modified slightly for atkins and to make as a waffle using 2 real eggs, 1/2 tsp baking powder, and no splenda. This makes exactly enough for two small waffles to top with sugar free syrup. YUM!!! - 9/9/09

    As a flaxseed lover I'm loving this recipe! I too adjusted slightly by using 2 real eggs, 1/2 tsp baking powder, and no Splenda. Easy, delicious, and fits perfectly into my eating plan -- what more could you ask for?? :-) - 9/3/11

    This recipe is incredible! I make it several times a week. We spread a little peanut butter on top before adding syrup. It satisfies a need for pancakes while dieting, and is full of protein and nutrition. - 1/4/13

    I make these for breakfast every Sunday morning. Instead of Splenda and Vanilla, I use a tbsp of Sugar Free Caramel Coffee Syrup. My son LOVES them! - 8/21/11

    I made these with real eggs instead of beaters and it was way too runny, they came out like crepes. To thicken the batter I added extra flax & baking powder but no matter what I did they tasted like french toast.I'm not a fan of french toast at all, I think I'll try with Atkins baking mix next time - 6/4/13

    I'm beginning my journey in this low carb lifestyle and I was getting fed up of eggs in the morning. I don't yet have all those nut flours, so I was looking for something with few simple ingredients. I loved it so much, that I made half of it for dessert the same day!

    It was good. I was really craving pancakes so I tried this recipe out. I followed the recipe except I used 2 whole eggs. They are not exactly like pancakes but they do the job. They have a nutty texture and the flavor is good. I will definitely make them again! - 6/24/12
