Introduction

Number of Servings: 6

Ingredients

    1 cup lentils
    3 stalks celery, chopped
    1/2 cup pearled barley
    1/2 tsp oregano
    6 cups vegetable stock
    2 cups water
    1/2 tsp ground cumin
    1/2 onion, chopped
    1/4 tsp black pepper
    2-3 garlic cloves, minced
    1/8 tsp red pepper flakes
    2 carrots, diced
    3 cups fresh baby spinach, stems removed

Directions

Place all ingredients except spinach in crock pot. Cook on high setting until lentils, barley and vegetables are tender. Stir in the spinach and let cook for another 5 mins or so.

Makes 6 servings.

    Has anyone made this recipe yet? I'm tempted to try it but since it offers no time guidelines at all and I work 8+ hours a day, I'm nervous to just turn on the crockpot and let it go all day. Any tips? - 10/22/09

    Sorry about the lack of time guidelines! I made a batch a few days ago and left it on high for six hours and it was fine. It should be okay on low for 8+ hours, but not all crockpots are the same. I would suggest maybe trying to make it on a day when you don't have to work to be safe.

    Easy, cheap, healthy, and tasty! I had this in the crockpot on low for 10+ hours while I was at work and it turned out fine. My kids even ate it, although they said they would have preferred it without the spinach. - 10/23/09

    I loved it! Very simple to make, low-cal, healthy, and tasty. I'm going to try it again tonight and throw some variations in there... maybe some zucchini, mushrooms, and anything else interesting I find at the grocery store. - 10/27/10
