Ingredients

    Mushrooms, fresh, half cup, thinly sliced
    Zucchini, baby, 1 small to medium, thinly sliced
    Olive Oil, 1 tsp
    Egg, fresh, 2 extra large
    Onion, I tablespoon chooped
    ! clove garlic finely chopped

Directions

Thinly slice mushrooms zucchini and chop onion and garlic. Put olive oil in non stick pan and heat for a minute. Add these to a bowl and crack the two eggs into the vegetable mixture. Add salt to taste. pour mixture into heated saucepan. set on low heat, cover and simmer for about 5 minutes or until egg is done.
You may serve this with one whole wheat dinner roll with 2 lettuce leaves, half a chopped cucumber and tomato,particularly if taken for dinner.

    I've never tried mixing the veggies into the eggs. Will try that next time. I use diced asparagus, green onions and mushroom, sauteed, and topped with a slice of white american cheese (yellow cheese has food coloring in it) - 1/19/10
