Introduction

Ingredients

    1 lb spinach ( selection only listed 10 oz)
    1 T olive oil (may need to add more)
    2 garlic cloves, minced
    1 med tomato, chopped
    1/2 tsp salt divided
    1/2 tsp pepper divided

Directions

Wash spinach and dry as possible. Saute spinach in hot olive oil in a nonstick skillet over medium-high heat 2 minutees or until wilted. Stir in 1/4 tsp each of salt and pepper. Transfer spinach to a serving platter.
Add minced garlic to skillet and saute 1 minute. Stir in chopped tomato and saute until thoroughly heated. Stir in remaining 1/4 tsp each of salt and pepper. Spoon mixture over spinach on platter. Drizzle with vinegar and serve immediately.
