Introduction
For this recipe I use frozen chicken tenders or chicken breasts in my slow cooker. This is a good recipe to substitute beans, veggies, etc. and make it they way you want.Note: I also have a low sodium version of this recipe that is similar, and tastes good, too!

Ingredients

5 Frozen Chicken Breasts (or 20 frozen Chicken Tenders)
1 16 ounce jar Salsa Verde
2 cans Black Beans
1 can Sweet Corn
1 can Diced Tomatos with no salt
1 teaspoon Ground Cumin
1 small (3 oz) package of cream cheese
Directions
Place frozen chicken breasts or tenders in bottom of slow cooker. Add remaining ingredients except cream cheese.
Cook on low for 8-10 hours. At this point I remove about 1/2 the liquid because I like my sauce thick, like a stew. You can leave all the liquid if you want a "soup". Add cream cheese, cook on warm setting for 30 minutes, then stir.
This can be served over rice or wrapped in flour tortillas (not included in nutritional info.)
One serving is 1/2 a breast or 2 large chicken tenders.

This was SENSATIONAL!!!!! I added about 3 chicken and tomato bouillon cubes. It gave it more seasoning, but not as much sodium. We loved it over the brown rice and had enjoy for two nights!! This was a dream meal for me because it was effortless and not time consuming. Can't wait to eat this again!! - 2/6/09

FABUUUUULOUS!!! EASY!!!! DELICIOUS!!! I substituted beef and other things... 'cause that's what I had around but OMG!!!! The beef was tender and shreddable, it was ready after 2.5hrs on HIGH and 4hours on LOW(I was home and worried about starting from frozen)...what do I know. :)

Very close 2 a recipe we have as a standard, except we use cilantro & no cumin. Plus we top the stew with FF Sour Cream instead of mixing it in (FF Sour Cream doesn't do 2 well when cooked). Tried UR recipe w/ cumin, but still used FF Sour Cream as a topping. Good! Cumin & Cilantro both next time! - 10/13/09

this was delicious! Everybody in my house loved this. I used a can of rotel and I rinsed and drained the corn and black beans- then I added a can of water and a low sod. chkn bouillon cube- will add more water next time- it wasn't soupy (my fault not the recipes) but it was still sooooo good! - 9/1/09

Ok, wow! This was fantastic! I used thighs as recomened by another reader. Added 1/2 pkg.of ranch salad dressing,1/2 bag of frozen mixed vegetables for soup, garlic,cumin,red pepper flakes and onion powder.And one can of reduced sodium chicken broth.It came out wonderful and hubby loved it too. - 1/9/10

I just walked into my house with this cooking since 10am, and it smells WONDERFUL! I snuck a bite, and wow! The chicken is sooo tender, and the sauce is light but still flavorful and spicy.

I made this and it was delicious. I did do some modify it a bit. I didn't have black beans, so I used pinto. I also added celantro, and a can of refried beans. I served it over rice, and my husband said it was delicious. Next time I make it, I will add more spice to it. My husband likes it hotter. - 11/9/08

We loved this one! I used only one can of black beans, pico de gallo in place of the salsa verde, added onions, olives, cilantro, jalapenos, shallots, LIME JUICE, and garlic. For the corn I used this corn/tomato salsa from trader joe's. Love the cream cheese, perfect addition! Ate over brown rice. - 1/27/11

I found this recipe on another website and have made it before. I used Rotel instead of plain tomatos. I drained the liquid from the corn and added a can of creamed corn. I shredded the chicken breasts once they were cooked. Next time I'd use less chicken and more corn and beans. Excellent! - 1/25/10

This is a great and easy recipe! I used more liquid to make it like a soup. I also substituted a can of golden hominy for the can of sweet corn...it's a texture thing since I really don't like corn in soup. I'm sure it's great either way. 5 weight watchers points based on the nutritional information - 1/17/10

I thought this was very good! I took out a little more than half the broth to make it more thick. My only problem is the chicken shredded itself when I stirred it and I could no longer tell what a serving was. easy to make...cooked mine on low setting-shredding was virtually a snap-used plain low-fat yogurt instead of the cream cheese(just because I didn't have it on-hand) and filled the flour tortillas with the filling(did drain half the liquid as recommended) maybe two servings left-over! yummy! - 1/13/10
