Introduction

For this recipe I use frozen chicken tenders or chicken breasts in my slow cooker. This is a good recipe to substitute beans, veggies, etc. and make it they way you want.
Note: I also have a low sodium version of this recipe that is similar, and tastes good, too!
For this recipe I use frozen chicken tenders or chicken breasts in my slow cooker. This is a good recipe to substitute beans, veggies, etc. and make it they way you want.

Number of Servings: 10

Ingredients

5 Frozen Chicken Breasts (or 20 frozen Chicken Tenders)
1 16 ounce jar Salsa Verde
    2 cans Black Beans
    1 can Sweet Corn
1 can Diced Tomatos with no salt
    1 teaspoon Ground Cumin
1 small (3 oz) package of cream cheese

Directions

Place frozen chicken breasts or tenders in bottom of slow cooker. Add remaining ingredients except cream cheese.

Cook on low for 8-10 hours. At this point I remove about 1/2 the liquid because I like my sauce thick, like a stew. You can leave all the liquid if you want a "soup". Add cream cheese, cook on warm setting for 30 minutes, then stir.

This can be served over rice or wrapped in flour tortillas (not included in nutritional info.)

One serving is 1/2 a breast or 2 large chicken tenders.

Number of Servings: 10

Loved this recipe!! I made a few additions based on other's comments..I added low sod. taco seasoning, cilantro, sliced mushrooms, and used whipped cream cheese. Will def make again. SO easy! (Camo..I think the chicken is supposed to fall apart..it's a stew.) - 11/25/08

This was SENSATIONAL!!!!! I added about 3 chicken and tomato bouillon cubes. It gave it more seasoning, but not as much sodium. We loved it over the brown rice and had enjoy for two nights!! This was a dream meal for me because it was effortless and not time consuming. Can't wait to eat this again!! - 2/6/09

I made this recipe about two weeks ago and will be making it again. I used rotel instead of diced tomatoes. It was so easy to fix and the kids and hubby have requested it again. It is tomorrows meal. Thank you so very much for the recipe. - 4/16/09

Great recipe!! You have to be careful putting frozen meat at the bottom. It can cause the bowl to crack (I've had two crack). If you put it on the salsa or tomatoes, it is safer. - 2/6/10

FABUUUUULOUS!!! EASY!!!! DELICIOUS!!! I substituted beef and other things... 'cause that's what I had around but OMG!!!! The beef was tender and shreddable, it was ready after 2.5hrs on HIGH and 4hours on LOW(I was home and worried about starting from frozen)...what do I know. :)
    Thank you so much.

Very close 2 a recipe we have as a standard, except we use cilantro & no cumin. Plus we top the stew with FF Sour Cream instead of mixing it in (FF Sour Cream doesn't do 2 well when cooked). Tried UR recipe w/ cumin, but still used FF Sour Cream as a topping. Good! Cumin & Cilantro both next time! - 10/13/09

I made two batches within two weeks. I accidentally bought the Tostito's Medium salsa by mistake. I also cooked the dish on high for 4-5 hours and shredded it. YUMMY!!! Next time I'll try adding pinto beans at the beginning and skip the cream cheese for a fat free creamy texture. - 11/3/09

I just walked into my house with this cooking since 10am, and it smells WONDERFUL! I snuck a bite, and wow! The chicken is sooo tender, and the sauce is light but still flavorful and spicy.

A couple of switches: I used thighs(they do better in the crock); used low-fat cheese, plus hot sauce! Y

Buy South West Salsa which includes blk beans, corn, stewed type tomato with choice of mild medium or hot. Less expensive to buy whole cooked chicken at market, then shred for soup. I do add low sodium chicken broth. Add as much low fat sour cream as desired to make it creamy. - 11/9/08

    Very Good
Not too pretty, but tasty and satisfying. Next time I'll sneak more veggies in there and maybe some fresh cilantro. - 7/17/12

I made it this morning before I left for work and just got home and the house smelled amazing! I broke down and tasted it before adding the cream cheese. I more than tasted it, I had a small bowl. I haven't even served it yet to anyone. I love it! It's is totally one of my favorites! Thank you! - 5/25/12

    Incredible!
Loved this recipe. I made the recipe exactly as the recipe. My kids ate two to three servings each. - 5/24/12

    Incredible!
I throw half a cup of rice in for the last two hours. Yum!
I skip adding the cream cheese.
