I make nearly the exact same thing! We love it. However, I do use my own homemade salsa. and do not add cheese at all. Instead of canned, I use frozen corn. We eat it with whole wheat, low sodium cackers.I forgot, sometimes will cook longer, slow cooker, shred chicken using 2fork,& add chilli spice
Delicious! I did used Rotel instead of canned tomatoes and used reduced sodium taco seasoning instead of cumin. Otherwise I followed the recipe exactly as is. I served it over mashed potatoes like another user suggested. It was a very filling hearty meal that I will definitely make again!
What is your low sodium recipe like? I really need to watch my salt intake. Can you tell me in a few words or what is the name of it so I can look for it.
I have to watch my carbs (diabetic) so I removed the black beans. I replaced the cream cheese with neufchatel cheese. A tad lower in fat and calories.
Delicious!!!! I added taco seasoning and a can of low sodium red kidney beans (the combo. of two different beans is good). Thanks!!!
Loved the recipe, worked out very well. Only thing was that the cream cheese didnt dissolve very well. It tasted delicious but looked weird. Next time I'll substitute light or fat free sour cream. Thanks for the delish recipe. It was perfect for a hot day when I really didnt want to use the oven.
This really is delicious and I also like to thicken it up by removing some of the juice. A suggestion though if you remove some of the juice. Since I like to serve this with a little rice I use the juice I removed and low sodium chicken broth to make rice and it gets SO much flavor!
I made this last week, and it was great! So convenient to use frozen chicken breasts. I sprinkled chopped fresh cilantro on top and a little reduced fat mexicheese blend. So good! Family loved it.
I wasn't as impressed with this recipe as the other reviewers. To me, the addition of cream cheese did nothing for the flavor or texture. If I made it again, I'd skip the cream cheese entirely and add fat free sour cream as it was served.
IMO, the salsa verde MAKES this chili. I added two cans of mild rotel instead of diced tomatoes and left out the cumin but added half an onion finely chopped and 2 tsp of garlic. I used 3 oz or fat free cream cheese which didn't melt very well but I was able to make it work. Awesome.
Making this tonight! Super easy for prep and looks like it will be yummy! I used Ro-Tels despite the extra sodium they add.
This is an outstanding recipe! I did, however, add low-sodium taco seasoning, fat free cream cheese(instead of reg.), and a can of Rotel mild. The only thing I must change for the next batch is to use MILD salsa instead of Medium salsa (it's a little warm). I served it over brown rice.
All my family enjoyed this even my pickest eater! He doesn't like anything chunky or red usually and he could not get enough! Made like recipe directed also added low sodium taco seasoning about 1/2 packet to chicken! Was great and super easy! Will definately make again! Thanks
