Karl's Black Bean & Rice Soup
This simple, hearty soup is inspired by the traditional bean & rice dishes served worldwide, and bean bacon soup, which is popular, but not acceptable for diets that don't include pork or red meat. You can substitute rice for barley or other whole grains, but it should be pre-cooked, and the beans should be canned, not dried.
You can play around a little with the ingredients, like leaving the turkey out for a vegan option.
