Introduction

Yummy and low calorie! Makes 18 to 24 muffins. Yummy and low calorie! Makes 18 to 24 muffins.
Number of Servings: 24

Ingredients

    1 cup splenda
    1/4 cup brown sugar
    3/4 cup unsweetened applesauce
    2 large eggs
    1/2 cup non fat dry milk
    1 cup flour
    1 cup whole wheat flour
    2 1/2 tsp baking soda
    4 large overripened bananas

Directions

Mix the first 4 ingredients well, add the rest slowly and mix well. Spray a muffin pan with non stick butter spray. Preheat to 350. Poor by the 1/4 cup into the muffin pan. (This recipe originally was to be cooked in one pan, but it was never done? So I made it in 2 instead) Hope you like it. Check after 20 minutes, may need to go longer.

Based on 24 muffins.

NOTE* lately I have been baking this in a bundt pan. Turns out really good. But cook it for about 45-50 minutes. You can use 1/2 cup butter instead of the applesauce, but it add to the calorie count, I have found it absolutely delicious with the applesauce! Yum, Yum!

    Used egg beaters and 2 c whole wheat flour. Put in 2 loaf pans and baked at 350 for 40 minutes. My husband & I loved it. Will make again...saved to favorits!!! - 8/31/10
