Introduction

Number of Servings: 12

Ingredients

    1 C whole wheat flour
    1/2 C whole oatmeal
    3 tsp baking powder,
    1/2 tsp baking soda,
    1/4 tsp salt
    1 1/2 tsp cinnamon
    1/4 C brown sugar
    1 egg plus 1 egg white
    1/3 C unsweetened applesauce
    1 C mashed banana

Directions

Preheat oven to 400. Mix dry ingredients in a large mixing bowl. Mix applesauce, egg, egg white, and mashed banana together before adding to dry mixture. Stir just until well blended. Spoon into 12 muffin cups.

Bake for 12- 18 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let cool before serving.

    These are wonderful. I did add a 1/4 of a cup of chopped walnuts, 3 tablespoons of miniature chocolate chips and doubled the cinnamon. I have found that cinnamon increases the sweetness without added sugar. - 2/24/11

    I added 1/4 c walnuts for 12 muffins, 16 each additional calories 108 calories each for 10 mufins which was all it made. Used Stevia and 1/2 th brn sugar. - 10/29/09

    These are fantastic! I actually spread them out to 15 muffin cups, so that I can grab two for breakfast and not feel bad! Even my "not healthy what-so-ever family" loved them. Next time I'll sprinkle a few slices of almonds on top, just for crunch. - 7/19/09

    Mine turned out badly! Dry, probably needed to cook 12 min rather than 18. The banana taste was not strong. Would have to try whole wheat pastry flour if I try again.. A disappointment after many rave reviews. - 7/15/13

    Used 1 chopped apple instead of sauce, added 5 chopped strawberries...made them as mini muffins, recipe did 24 mini-s.
    I didn't use paper liners, and I will try these again using liners...wasn't very happy with the texture of the lower muffin...
    Need to eat these with a cup of tea, or coffee. YUM
