Number of Servings: 8

Ingredients

    4 cups sliced zuchinni
    4 cups sliced yellow squash
    1/4 cup chopped red onion
    2 tbsp Extra Virgin olive oil
    1/4 cup parmasean cheese
    Garlic salt and pepper to taste


Directions

In microwave safe bowl with cover. Add zuchinni, squash, onion, olive oil, garlic salt and pepper. Stir to mix. Cover and microwave for 10 minutes or until tender stirring once. Sprinkle top with parm cheese and serve.
Makes 8 1-cup servings

    This was delicious! I did like others, caramelize my onions and threw some minced garlic in with them then added to the zucchini and squash before microwaving them for 10 minutes, i sprinkled them with the parm cheese when done. SOOO easy! - 7/17/12

    Easy & good! Used fresh zucchini & squash from a friend's garden & followed the recipe other than putting 1/2 cup red onion in (which was too much). Will definitely make again but only with 1/4 cup onion that recipe calls for. Great paired with SPARKRecipe Creamy Parmesan Broiled Tilapia. - 8/4/11

    I cut this in half since it was only for two of us. Made this with the exact Ingredients and cooked in microwave. It was excellent and tasty. We have so much squash out of our garden, this helped in eating a different way. I will make again and saved it to my cookbook! Thanks.

    This is a very tasty and easy to prepare dish! I might suggest some other spices to liven up the veggies a little bit, but other than that it was delicious! - 6/12/09

    I altered the recipe a bit. I used zucchini, carrots and onions. I also added one egg, you could use just egg white, some Italian bread crumbs and spices. After mixing this all together, I spread it over slices of lean turkey and baked it as a casserole with a sprinkle of cheese on top. - 2/4/09
