Introduction

Ingredients

    1 1/2 pounds chicken breasts (no skin)
    Nonstick cooking spray
    3/4 cup reduced fat sour cream
    1 1/2 cups Kraft 2% shredded cheddar cheese
    1 can cream of chicken 98% fat free
    1 1/2 cups salsa
    5 - 8" flour tortillas

Directions

Cut up chicken into small bite size pieces. Spray cooking spray into large skillet and cook chicken until no pink remains. Mix in 1/2 cup sour cream, 1 cup salsa, 3/4 cup sour cream, 1/2 can of cream of chicken soup, and 1 cup cheese. Cut up tortillas into 1" squares. Layer 1/3 tortillas on the bottom of casserole or crock pot. Put half of chicken mixture on tortillas. Then put another 1/3 of tortillas on, then the rest of the chicken mixture, then the last of the tortillas. Mix 1/2 can of soup and 1/2 cup of salsa, pour over top of casserole. Bake at 350 for 35 minutes, sprinkle remaining cheese on top and bake another 5 minutes. If doing in a crockpot, bake on low for 4 hours, add cheese the last half hour.

    Good Stuff comfort food for sure - I used mild green chile enchilada sauce instead of salsa and I added a small can of diced green chilies and sliced black olives - 9/13/10

    Made for the family tonight, husband would have liked it a bit spicier, 6yr old wasn't the biggest fan! I thought it was good, the sauce is pretty strong. I think some extra texture of another vegetable would be good and maybe a medium salsa. I will save the recipe and make again! Thanks for sharing - 9/6/10

    I used a salsa that had some chunky tomatoes, black beans and corn in it, came out great. Would recommend cutting chicken into very small pieces...and you could even make just the chicken/sauce and wrap in tortillas for enchilada tacos. Thank you. - 2/6/10
