Ingredients

    Chicken Breast, no skin, 1lb cut up into small chunks
    Onions, raw, 1 cup, chopped
    Garlic, 2 cloves chopped fine
    Cumin seed, 2 tsp (not ground)
    Oregano, ground, 1/2 tsp
    Beans, great northern, 3-15 oz. cans
    Green Peppers , 1/2 cup, chopped
    Peppers, sweet, red, fresh, 1 medium chopped
    Green Chili Peppers, 4 oz. can
    *College Inn Chicken Broth - 99% Fat Free, 2 cups
    lime juice, 1oz

Directions

In a 4 or 6 quart crock pot, combine chicken, onions, chicken broth, garlic, cumin and oregano. Let cook about 3-5 hours on low. Add drained beans.
Add the bell peppers and green chili peppers within the last 1-1/2 hour of cooking. You may add jalepeno peppers if you desire it hot. Add 1 oz of lime juice. Makes 9-1 cup servings
Top with 1/4 cup monterey cheese for an additional 105 calories or 1 oz of tortilla chips for an additional 142 calories if desired.

    Very pleased, our first attempt at White Chicken Chili. We need recipes that are low sodium and low potassium and this one fit with no salt chicken broth. Added 1/2 C Chardonnay with 1 hour to go. Will try adding green tabasco next time. Not real spicy which is fine with us. A keeper recipe! - 1/5/13

    Yummy. I added another half pound of chicken, and used fresh jalapeno's- and 1 large tomato.. And extra garlic. Cooked it for an extra hour and a half in the crock pot so the flavors would mesh more :-) - 8/7/11

    i finally got to make this chilil. it was really delicious. my boyfriend said it could use some spice to it. i suppose, but i really enjoyed it alot. plus, it didn't take all day to prepare it. thanks great idea. - 2/7/11

    This is a great dish without any changes.

    But to make it more to my taste I added diced jalapeno, a can of Rotel Tomatoes and cilantro. I rinsed the beans to lower ther sodium intake and didn't use the cheese.
