Introduction

A new twist on an old favorite! A new twist on an old favorite!
Number of Servings: 6

Ingredients

    8 oz uncooked whole wheat spaghetti
    3 boneless skinless chicken breast
    1 cup chopped bell pepper
    1/2 cup chopped onion
    16 oz (1/2 of a 2lb pkg ) reduced fat (or light) velveeta cheese- cubed
    1/2 cup skim milk
    2 tbsp minced garlic
    1 tsp butter

Directions

Put chicken in a crockpot and cook on high for 3-4 hours. (put it on while you are at work, and its done when you get home) In a seperate pan, boil pasta until done.In a skillet, sautee onion, garlic and bell pepper with 1 tsp butter. In a large bowl, place chicken and shred with a fork. Add 1/2 cup of the broth from the crockpot. Add sauteed veggies, cheese, drained pasta, and milk to chicken. Pour mixture into a 8.5x11 casserole dish. Bake in the oven for 20-30 min, or until cheese is bubbly. Remove from oven and give it a quick stir. Makes 6 one cup servings.

    Cheese has a lot of sodium, so if you're watching your sodium intake skip the cheese sauce and top your pasta with red sauce. It's better for you anyway. - 4/13/08

    I haven't made this yet, but it just sounds delicious! I don't know if I will use all of the 16 oz. of l/f velvetta ... I might use some other lighter cheeses, such as parmesan in with it. BUT it sounds great!!! TY!!! ~Nomi - 4/2/08

    Sounds great, but personally I boil the chicken and then cook the noodles in the chicken broth for more flavor. I also like to add rotel and mushrooms for a kick. - 4/2/08

    I have made something like this before, but used mild Rotel instead of bell pepper and it is absolutely wonderful! One of mine and my kids fav dishes!! - 4/2/08
