Ingredients

    *Heart Smart Bisquick mix, 1 cup
    Egg substitute, 1 cup
    Kid Builder Milk, 2 cup
    Cheddar Cheese, Low Fat, 1/2 cup, shredded
    Spinach, fresh, 1 cup, chopped
    Green bell peppers, 1/4 cup, diced
    Red bell peppers, 1/4 cup, diced
    Mushrooms, fresh, 1/4 cup, diced
    Onions, raw, 1/4 cup, diced
    Ham, extra lean, 1/2 cup, diced

Directions

1. Heat oven to 400 degrees.
2. Grease 10" pie plate or 8" square.
3. Sprinkle veggies, ham and cheese in plate.
4. Beat remaining ingredients until smooth and pour into plate.
5. Bake 35 to 40 minutes or until a knife inserted halfway between edge and center comes out clean.
6. Let stand 5 minutes before serving.

    I used fat free half & half (don't know what builder milk is?) and used reduced fat mozzarella cheese. I poured mix into single servings in a muffin pan to freeze and take for quick to go breakfasts. They are delicious and the kids think they're way cool.

    I added some raw peeled zucchini, cut the cheese in half and added 1/2 cup low fat cottage cheese, 1/2 tsp Mrs. Dash extra spicy and used smoked turkey sausage instead of ham, it was excellent - 8/23/11

    The family said "Make this again". I did some substitutions - 1 cup regular bisquick, 4 eggs, 2 cups 1% milk, 1/2 cup mexican cheese, 1 cup frozen spinach, 3 slices of lunch meat ham. Turned out great. - 3/11/08

    It was very good! I used 2c of skim milk, skipped the ham, and added lots of veggies. My only complaint was that I made this in a 8x8 dish and there was no way to get 8 servings out of this. I only got 6 servings but the leftovers will be great reheated! - 2/11/12

    This was delicious. I made this for a Mother's Day brunch and got many compliments. I used canadian bacon instead of ham and didn't use mushrooms or spinach and added red peppers. Also used Lactaid FF milk. - 6/2/08
