Number of Servings: 25

Ingredients

    2 lbs cubed beef
    1 cup carrots, chopped
    2 cups potatoes, chopped
    1 cup onion, chopped
    1 cup celery, chopped
    1 cup peas
    1 cup barley, uncooked
    1 cup lentils, uncooked
    2 packages beef stew seasoning mix
    8 cups water
    1/4 cup whole wheat flour

Directions

1. Combine seasoning mix, water, and flour and whisk together in slow cooker pot.

2. Add all remaining ingredients to slow cooker.

3. Cover and cook on low for 6 to 8 hours, or until beef cubes are cooked through, and veggies are at desired tenderness. Stir occasionally. (Cook on high for 4 hours)

If stew is too runny, combine 2 tablespoons of flower with 2 tablespoons of water and whisk until made into a paste. Add to stew, cover, and cook for an additional 5 minutes.

Makes 25 1-cup servings. Since it is such a large batch, you can freeze some of it to eat at a later date.

    I'm goign to try this recipe and tweak it a bit, it's very similar to my mother's recipe. The only problem with this is your calculations are wrong... I have no idea how you get 25 servings... the calories are off according to the ingredients and there definitely should be more fiber.... Other than - 9/7/11

    Good stuff. But I noticed the full nutritional breakdown of Slow Cooker Beef Stew calories by ingredient made no mention of the lentils, which for 0.04 cups should add about 27 calories. I left out the potatoes though (it was still plenty thick), so by my reckoning this should be about 100 calories - 1/13/11

    i dredged the meat in the flour and browned it before adding it to the slow cooker. i added the peas (i had frozen) the last hour of cooking so they didn't turn to mush. traded seasoning mix for what i had. garlic, oregano, mrs dash, s/p. never tried beef stew w/ lentils & barley. sounds great! - 12/13/10

    I am making this today...this recipe has to have been blessed by Jesus....because I cannot envision feeding 25 people, their meat course, out of ONE crockpot of food....It's gotta be good!! Serving size for 25 must explain the 84 calories per serving...gonna try it anyway! Will update w/review. - 12/10/10

    Made this today. I added garlic and did'nt add the lentils. I thought it looked and smelled so good while it was soupy. Thinking next time of not using the flour.
    It was very filling and my hubby and 9 and 10 year olds also liked it.

    This is not tasty. A similar recipe by Felidstar with ham is much better. The nutritional information does not mesh with my calculations. I got 18 cups. Even with 25 servings I came up with 101 calories and 2.4 fiber. Will be adding herbs, Worcestershire and garlic to the leftovers to brighten i - 2/18/09
