Ingredients

4 Boneless Chicken Breast
Salt
Pepper
Basil
3 Tablespoons Butter
3 Tablespoon Light Olive Oil
Fresh Mushrooms
1/2 Cup Marsala Wine
Directions
Cut chicken breasts into halves
Now that you have 8 pieces of chicken, pound with mallet between plastic wrap until each piece is about 1/4 inch thick.
Season each piece with a dash of salt, pepper, and basil
Heat butter & oil in a non-stick skillet on Med heat
Add Chicken and cook 2-4 minutes until light golden brown
Turn chicken over and add sliced mushrooms around chicken, cook 2-4 more minutes
Stir mushrooms; add Marsala wine to pan. REDUCE heat to med-low,cover, simmer 10 minutes until alcohol cooks out.
Serving size - 2 pieces of chicken (1 breast)

what could be substituted for wine? I'm thinking chicken stock and maybe some grape juice to avoid the alcohol. - 5/21/09

When using wine while cooking within only a few minutes the alcohol cooks out of the wine. I live in Italy and they use wine here in most dishes but there is no alcohol left once ready to be served, just great flavor!
