Ingredients

    1 tbsp. EVOO
    1 large sweet potato/yam
    1 tsp. sugar ‘n cinnamon
    1 tsp. ground ginger
    2 tbsp. honey
    ¼ cup fat free half & half
    4 packets no calorie sweetener
    1 Nature Valley Oats ‘n Honey Granola Bar, crumbled

Directions

Peel sweet potato and cut into 1/4 inch thick cubes. In a heated skillet, place EVOO and potatoes into skillet. Add sugar 'n cinnamon, ginger, honey and half and half. Stir until mixed together. Cover and simmer medium heat, stirring occassionally, until softened, about 20 minutes.

Remove potato from skillet, reserving liquid. Coursely mash potato until desired consistency is reached. Add sweetener. Mix well.

Serve in mini ramikins, topped with some of the Nature Valley bar. Pour 1 tablespoon of reserved liquid before serving. You can also add a little fat free, sugar free whipped topping.

    Good
    I have never heard of EVOO... but my kids help me make a recipe similar to this one. Instead of the granola bar we use a handful of baked granola. Very simple & can enjoyed at any meal - 1/23/18

    I think anything with artificial sweetener is not good. I think that stuff is terrible for us.
