Introduction

I made this up one day when I was craving cabbage and had a bunch of kidney beans in the fridge that needed using. Canned kidney beans would work fine here if you're in a hurry. Ingredients

    1 medium yellow onion thinly sliced
    2 cloves garlic minced
    1/2 small head of cabbage thinly sliced
    2 cups kidney beans
    1 can stewed, chopped tomatoes
    1 cup water
    salt and pepper to taste
    optional: chili powder, paprika, red pepper flakes, whatever other seasonings you like.

Directions

Fry the onion and garlic until golden and fragrant in oil or cooking spray in the a large pot. Add the cabbage and cook until beginning to brown. Add whatever spices you would like along with kidney beans, tomatoes and water. Cover and simmer until the cabbage is tender, about 30-40 minutes. Adjust spices and serve over rice, bulgur, quinoa, or whatever grain you like.

    Great way to use up that cabbage sitting in the vegetable drawer. Quick and easy (I used canned beans). Used Italian seasoning this time. - 10/22/18

    I only cook the cabbage for 3-4 minutes before adding the hot beans that have been soaked and cooked. It's really good. Other than having to time the soak of the beans, it's fast. - 7/21/18

    Added carrots and celery. Used 2 cans/beans (rinsed and drained). Replaced water with veggie broth; seasoned with pizzeria seasoning. Served with quinoa. - 7/4/18
