Ingredients

6 Large Summer (yellow) Squash, sliced
    1 Medium Onion, chopped
1 Tbsp Extra Light Olive Oil
    Salt and Pepper to taste

Directions

Slice squash in medium slices. In large iron skillet add the olive oil; then add the squash and onions in layers, sprinkling salt and pepper between layers. Cover and cook over low heat.

When squash starts to become tender, stir while chopping the squash a bit as you mix, just enough to break up the slices a bit. Cook until squash is tender, about 20 minutes or so.

Delicious. Made it without the onions and it was great. Reminded me of fried squash but without the added calories. - 6/25/08

    Incredible!
Love this as a side! I like it with a bit of garlic and I saute in brummel and brown instead of olive oil for flavor. - 9/25/18

    Very Good
Very simple, very good. This is the first time I have tried squash, I found the taste to be a bit overwhelming. I added mushrooms to this recipe and the gentle flavors of the squash really added to the mushrooms and onions. Needed a bit of salt and pepper to round out flavor. Overall- tasty! - 3/23/11
