I made this using a whole wheat tortilla instead of the bread. I rolled it all up and ate it on my commute to work. Awesome! For such a little meal, I was sure full for a long time. - 7/11/09

I like substituting the bread for wholewheat bagels, and cheddar cheese. I put the cheese on the egg while it's cooking (i prefer to scramble them) and it cooks into the egg. very good!! :) - 6/19/11

Definitely plan on trying this - I've been scared to try egg substitues but the cheese should help with the flavor. - 9/14/09
