Ingredients

    Chicken Broth (low sodium) - 3 cups
    Celery - 1 cup diced
    Onion - 1/2 cup chopped
    Salt - 2 tsp
    Pepper - 1 tsp
    Carrots - 1.5 cups chopped
    Canned Corn - 1 can
    Crushed Tomatoes - 2 cans
    Water (tap) - 5 cups
    Cabbage - 1 large head chopped
    Tomato Paste - 2 6 oz cans
    Kidney Beans - 2 cans
    Mushrooms - 1 cup chopped
    Spinach - 10 oz frozen chopped
    Peas - 8 oz frozen
    Green Beans - 1 cup chopped

Directions

Pour all ingredients into large pot. Bring to boil and reduce to low heat. Let simmer for 2-4 hours.

    I made this recipe last night. It was fantastic! I changed the beans to 1 can dark kidney beans, 1 can white kidney beans, 1 can romano beans, and 1 can chickpeas. Other then that i followed the recipe and the while family loved it! - 5/13/09

    Incredible!
    Made this soup last month. Ate a bowl full and froze the rest in individual bowls so I'd have something quick and easy to bring in to work. All I kept hearing from my co-workers was ooohhh what did you bring in and mmmm what's that wonderful smell. Simple and tasty. Love it. Thanks for shareing - 3/18/10

    I left out the corn and kidney beans to make this soup virtually 0 points (with a reasonable serving size). Our whole family ate it and enjoyed it and it was a great way for my husband and I to fill up a bit before dinner. - 1/24/10

    This was easy to make. I accidently picked up crushed tomatoes with Basil and I think they enhanced the flavor. It is a wonderful soup. - 3/10/09

    Incredible!
    It's worth the effort to make this soup. You can freeze some for other meals and you can eat enough to really fill you up since it's so low in calories and fat. Try different spices to change it up a bit. - 3/8/09
