Introduction

Tofu is used as a substitute for ground meat in this recipe. If you's prefer a more "meat-like" appearance and texture, freeze the tofu at least a day before making this recipe. Ingredients

    12-ounce package firm tofu
    2 teaspoons olive oil
    1 small-medium onion, chopped
    1-2 portobello mushrooms, chopped
    2-5 garlic cloves, chopped (according to taste)
    1 egg, beaten
    1/4 cup shredded swiss cheese (mozzarella or cheddar can be substituted if desired)
    salt & pepper to taste

Directions

1. Preheat oven to 350 degrees

2. Chop or crumble the tofu into very small pieces

3. Heat olive oil in small skillet. Lightly sauté onion, portobello mushrooms and garlic. Place in a medium bowl and add chopped/crumbled tofu.

4. Mix in egg, cheese, salt and pepper until thoroughly combined.

5. Drop tofu mixture onto greased or non-stick baking sheet in 6 portions. Flatten with spatula to form patties.

6. Bake 30 minutes or until golden brown. Top with your favorite toppings.

    You canmake the tofu more firm by wrapping it in a couple of layers of papertowels and nuking for 4 minutes. The paper towels absorb lots of the moisture. This is especially good if you can't find firm tofu.

    Would it be possible to fry it on the stove rather than bake it? I don't have an oven:) - 6/12/08

    absolutely you can fry it! I only bake it as it cuts down on the oil, but you can cook them any way you would a regular hamburger!

    great tip about tofu. going to freeze mine. --
    did olive oil, onions, mushrooms and crumbled tofu and enjoyed. forgot about garlic. don't need egg for taste, maybe as a binder. wouldn't this make a great pasta sauce? add tomato something. cheese kinda defeats the purpose.

    Easy adaptable to personal preferences, I only used 1 mushroom and half an onion but tossed in one chopped red pepper and a few sun dried tomatoes... YUMMM!
    The frozen tofu crumbled beautifully and I will absolutely make this again!

    I'm definitely going to try this but --- wondering what I could use instead of mushrooms --- I really don't like mushrooms in any shape or form. Any suggestions? - 6/12/08

    You don't need to have them in there - i would say either leave them out or put in another veggie you'd like...corn, red/yellow/orange peppers, even broccoli would be tasty...just chop them up into smallish pieces and add whatever appeals to you!

    As a vegetarian I find these delightful and so many variations can b e made, add corn, bell pepper, etc.
    Freezing or very cold tofu is easy to work with.

    Very Good
    Being out of portobello mushrooms, I tried adding some enoki mushrooms instead. Gave a nice bite! For those looking out for maybe a healthier bite as well, substituting two egg whites for one whole egg still made a perfect patty.

    Very good for tofu! It was not spicy enough for my family, so to add some more spice and disguise it, I added some steak sauce.. I know, probably not vegetarian, , so I'm just trying to get them to try new things. My patties made 8, and will be served on whole wheat English muffins. - 8/27/10

    I'm going to try this and take out the mushrooms and add in okra (frozen okra, microwaved first). Has a similar consistancy as mushrooms... we'll see. Your recipe sounds good though!!
